Description
The Santoku is the first knife we ever made and it took well over two years in development to get perfectly right.
It's the versatile, all-around knife you'll use every day and the first and most essential choice in any kitchen knife setup.
Its minimal silhouette has a bio-resin (partly made from vegetable scraps) handle available in hand marbled patterns, making each knife one of its kind. The core steel is hardened to 62 HRC for wildly good edge retention and sharpness. Designed for a natural pinch grip, the balance point sits just forward of the handle for great control and comfort. Finished with a light sandblast and our engraved nomi logo on the blade.
Like all our knives, it's assembled by hand in our small studio in Stockholm.

Care
Care
Handle with care. Always use nomi knives with a secure grip and only for food preparation.
Use a wooden or plastic cutting board. Hard surfaces like glass, marble, or ceramic can damage the edge.
Hand wash only. Harsh detergents and prolonged water exposure can cause the steel to rust.
Dry immediately with a soft cloth.
Store safely in a knife block, a protective drawer insert, or on a magnetic knife strip. Avoid storing knives loose in drawers to prevent dulling. A dull knife increases the risk of slipping and injury.
For best results, have your knife professionally sharpened every 6 to 12 months with regular use. Maintain the edge with a honing steel between sharpening.
