We shrunk the santoku! Smaller, lighter and with a thinner blade we wanted the baby santoku to be the ultimate knife for precise prep work. think garlic, limes, ginger, marzano tomatoes or topping of strawberries. quick and easy to work with, giving great control also for bigger tasks like trimming meat or deboning a chicken. or give that platter some character by serving it as a cheese knife.

Inheriting the santoku silhouette, we've given the blade some width to make room for your fingers. Signature Nomi handles from bio-resin (partly vegetable scraps). The core steel is hardened to 62 HRC for long-lasting edge retention, finished with a light sandblast and our engraved nomi logo on the blade.

Like all our knives, it's assembled by hand in our small studio in Stockholm.

Care

Handle with care. Always use nomi knives with a secure grip and only for food preparation.

Use a wooden or plastic cutting board. Hard surfaces like glass, marble, or ceramic can damage the edge.

Hand wash only. Harsh detergents and prolonged water exposure can cause the steel to rust.

Dry immediately with a soft cloth.

Store safely in a knife block, a protective drawer insert, or on a magnetic knife strip. Avoid storing knives loose in drawers to prevent dulling. A dull knife increases the risk of slipping and injury.

For best results, have your knife professionally sharpened every 6 to 12 months with regular use. Maintain the edge with a honing steel between sharpening.
